First Chaîne Scholarships Awarded

The first scholarships awarded to hotel and restaurant management students by the Confrérie de la Chaîne des Rôtisseurs, whose national headquarters is housed at the College at Florham’s Chaîne House, were presented on November 20 at the campus during a Beaujolais Nouveau Celebration.

At the scholarships’ presentation were, from left, Richard Wisch, associate dean and director, international hospitality/tourism management (Metro/Flor); scholarship recipients Robert Waller, student (Metro); and Heather Boyle, student (Flor); Burton Hobson, chairman of The Chaîne Foundation; scholarship recipient Michael Breitenbach, student (Flor); and President J. Michael Adams.

Burton Hobson, chairman of The Chaîne Foundation, presented the awards to undergraduate students Heather Boyle (Flor), Michael Breitenbach (Flor) and Robert Waller (Metro).

Awards were based on merit and need. Students had to have a grade point ratio of 3.00 or higher, while being actively involved in the International School of Hospitality and Tourism Management — its societies, chapters and events. Involvement in other University activities was considered a plus. Richard Wisch, associate dean and director, international hospitality/tourism management (Metro/Flor), and a group of faculty advisers evaluated the applications.

The Beaujolais Nouveau affair was a joint project of the students in Food and Beverage Management and Dining Service and Etiquette as an experimental method of drawing students into the creativity, productivity and profitability of producing an event. The Beaujolais wine, the first harvest of the season, was imported from France just for the event and was accompanied by a variety of student-prepared foods originating from France.

George Staikos, hospitality/tourism management (Metro), noted sommelier and wine educator, conducted four seminars on Beaujolais during the event.
